Yum Yum: Brussels Sprouts that Everyone Will Eat

Growing up my mom would sometimes have brussels sprouts for dinner while she fed us something else. I used to think it was so disgusting.  Then I went to a local restaurant, Neighborhood Services, and had their brussels sprouts (only because the waiter guaranteed we would love them).  he was right, they were EXCELLENT!!

I now make brussels sprouts at home all the time and will even make them for guests. I have had many turned up noses when I mention brussel sprouts but once they try it, they want the recipe to make themselves.

Try them, promise you will start adding brussels sprouts to your veggie list.  Kids love them too.

2 pounds Brussels sprouts, trimmed and halved
2 tablespoons olive oil
2 tablespoons maple syrup
3 slices of bacon, cut into1/2-inch pieces
Salt and pepper, to taste.
1. Set oven at 400 degrees. Have on hand a large rimmed baking sheet.
2. In a bowl, toss the Brussels sprouts with olive oil, maple syrup, bacon, salt, and pepper. Spread the mixture in a single layer on the baking sheet.
3. Roast for 25 to 30 minutes, turning several times, or until the Brussels sprouts are tender and caramelized and the bacon is crisp and golden. Catherine Smart
