1 head kale
pine nuts (about 1/4 cup)
shredded Parmesan cheese
currents
salt & pepper
1/8 cup lemon juice
1/8 cup olive oil
Toast the pine nuts by putting them in a non stick skillet. Keep an eye on them so they don't burn and shake them around.
Make the dressing by combining the lemon juice and olive oil along with salt and pepper to taste. I have a great salad dressing mixer that I make this in but you could put it in anything and shake it up.
Hand shred the kale and mix all other ingredients. the dressing should coat the entire head of kale.
